Late Game Question

Hi. New player (kinda). I played about 20 hours when it first came out and am just getting back into it. I was curious how late game plays.

I’ve played other MMOs and love the tank role but I’m unsure how late game runs for that. I’m running sword shield/greatsword currently and just wanna know if gunning for unkillable is viable.

Also side question is crafting a bunch of stuff (what I’m doing to level craft trees) and selling viable? Not looking to get loaded with cheddar cheese I’m just curious.
